Creamy chicken tomato soup
A delicious and comforting soup! Here's a simple recipe for Creamy Chicken Tomato Soup:

Ingredients:

- 2 tablespoons butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 2 cups chopped fresh tomatoes (or 1 can of diced tomatoes)
- 2 cups chicken broth
- 1/2 cup heavy cream or half-and-half
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, for serving (optional)

Instructions:

1. In a large pot or Dutch oven, melt the butter over medium heat.

2. Add the chopped onion and cook until softened, about 5 minutes.

3. Add the minced garlic and cook for an additional minute.

4. Add the chicken to the pot and cook until browned, about 5-7 minutes.

5. Add the chopped tomatoes, chicken broth, dried basil, and dried oregano to the pot. Stir to combine.

6. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes or until the chicken is cooked through.

7. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.

8. Stir in the heavy cream or half-and-half and cook for an additional 2-3 minutes or until the soup is heated through.

9. Season the soup with salt and pepper to taste.

10. Serve the soup hot, topped with freshly grated Parmesan cheese if desired.
